Focaccia, a beloved Italian bread, gets a delicious Indian twist with this straightforward, homemade recipe. This bread is the perfect accompaniment to a hearty meal or can be enjoyed on its own as a simple snack. Unlike a dense loaf, focaccia is known for its soft, spongy texture, which is created by a generous amount of olive oil and a proper rising time. This recipe is designed to be easy to follow, ensuring a perfect loaf even for those new to baking.
The first step is to activate the instant dry yeast. Combine it with sugar and warm water. The sugar acts as food for the yeast, which will begin to bubble and foam after about 15 minutes. This bubbling is a clear sign that the yeast is active and ready to make your bread light and airy. An active yeast mixture is crucial for a successful rise, so don't skip this step.
Next, you'll combine the plain flour (maida), olive oil, salt, and the activated yeast mixture. Knead this into a soft dough using warm water. The dough should feel smooth and pliable, not sticky. Once kneaded, transfer it to a deep, greased bowl. Greasing the bowl with olive oil prevents the dough from sticking and allows it to rise properly. Cover the bowl with a cling wrap and place it in a warm place for about 45 minutes to let it rise. This process, known as proofing, is what gives focaccia its characteristic light texture.
After the first rise, gently knead the dough again to release the air. Then, grease an aluminum tin with more olive oil and spread the dough in it with your fingers. The authentic focaccia look comes from the depressions you create with your fingertips, which also help the toppings and olive oil to settle into the bread. Pour more olive oil over the dough, and generously sprinkle it with dried rosemary, sliced black olives, and sea salt. The sea salt, in particular, adds a lovely crunchy texture and bursts of flavor.
The final step is to bake the bread. Preheat your oven to 200°C (400°F) and bake for about 15 minutes. The baking time is relatively short because of the thinness of the focaccia. Once baked, the bread should be a light golden-brown color. Immediately after it comes out of the oven, brush it with more olive oil. This gives the bread a beautiful sheen and adds another layer of flavor.
Once the focaccia has cooled slightly, you can demould it and cut it into squares. This homemade Italian soft bread is versatile enough to be used for sandwiches, toast, or as an appetizer. Ingredients

2 cups plain flour (maida)
14 tsp olive oil
2 tsp instant dry yeast
1 tsp sugar
1/2 tsp dried rosemary
2 tbsp sliced black olives
1 tsp sea salt (khada namak)
Method
for Indian style Focaccia Bread
- Combine the yeast, sugar and 2 tbsp of warm water in a small bowl, mix well and cover it with a lid and keep aside for 15 minutes.
- Combine the plain flour, 6 tsp of olive oil, yeast-sugar mixture and salt, mix well and knead it into soft dough using enough warm water.
- Transfer the dough on a clean dry surface, and knead it well till smooth and form a ball.
- Grease a deep bowl with 2 tsp of olive oil and place the dough in it and cover it with a cling wrap.
- Place the dough in a warm place for 45 minutes.
- Remove the cling wrap and knead it again in the bowl till smooth.
- Grease an aluminium tin of 200 mm. X 150 mm. (10” x 6”) with 2 tsp of olive oil and place the dough over it and spread it using your fingers and creating depressions with finger tips.
- Pour 2 tsp of olive oil over it, sprinkle rosemary , olives and sea salt evenly over it and press it lightly.
- Bake in a pre-heated oven at 200°c (400°f) for 15 minutes.
- Brush with 2 tsp of olive oil evenly over it.
- Cool slightly, demould it and cut into square pieces or as required and serve.
