For the shortbread dough
1 cup plain flour (maida)
1/4 tsp baking powder
1/2 cup cornflour
3/4 cup icing sugar
3/4 cup butter, softened

For the filling
1/4 cup (30 grams) grated dark chocolate
1/4 cup grated paneer (cottage cheese)
1 tsp orange squash (optional)

For the garnish
2 tbsp cocoa powder

  1. Sieve together the flour, baking powder and cornflour. Keep aside.
  2. Cream the icing sugar and butter till light and fluffy.
  3. Add the flour mixture and mix well to make a soft dough. Refrigerate for about 15 minutes.

  1. Combine all the ingredients and divide into 18 to 20 portions.
  2. Keep aside.

  1. Divide the dough into 2 portions and roll out each portion into a sheet of 3 mm. (1/8") thickness.
  2. Brush one sheet with cold water and place portions of the filling on it at an equal distance from each other.
  3. Cover with the second sheet and press down around each mound of filling.
  4. Cut into circles using a 75 mm. (3") diameter cookie cutter, ensuring that the filling stays in the centre.
  5. Knead the left-over portion of the dough and repeat steps 1 to 4.
  6. Place the cookies on a greased baking tray and bake in a pre-heated oven at 180°C (360°F) for 10 to 15 minutes.
  7. Remove form the oven and cool on a wire rack.
  8. Using a sieve, dust the cookies with cocoa powder.
  9. Store in an air-tight container.

Really unique recipe! its really nice and gooey in the middle! Loved baking and eating it! an enjoyable treat!
