Crafting the Wholesome Aloo Aur Shakarkand ki Chaat
Aloo Aur Shakarkand ki Chaat, also known simply as Sweet Potato Chaat or Vrat Chaat, is a delightful and nutritious dish that perfectly blends the earthy sweetness of sweet potatoes with the comforting familiarity of regular potatoes. This recipe offers a unique twist on traditional chaat, making it suitable for fasting days (vrat) while still delivering a burst of tangy, spicy, and sweet flavors. It's a wholesome and satisfying snack or light meal that appeals to a wide range of palates.
The Perfect Foundation: Boiled and Golden Potatoes and Sweet Potatoes
The base of this chaat relies on perfectly prepared potatoes and sweet potatoes. The recipe calls for boiled potato cubes and boiled sweet potato (shakarkand) cubes. A handy tip for optimal flavor is to boil them in salted water, which enhances their natural taste. Once boiled, these cubes are transferred to a broad non-stick pan with oil and cooked on a medium flame for 3 to 4 minutes, or until they turn golden brown. Occasional stirring ensures even browning, creating a desirable crisp exterior while keeping the inside tender.
The Aromatic Chutney Medley: Sweet, Tangy, and Spicy
What truly defines any chaat is its vibrant array of chutneys, and this Aloo Aur Shakarkand ki Chaat is no exception. It features a generous layering of two essential chutneys: khajur imli ki chutney and green chutney. The khajur imli ki chutney (date and tamarind chutney) provides a sweet and tangy counterpoint, while the green chutney delivers a fresh, spicy, and zesty kick. The combination of these two creates a complex flavor profile that perfectly complements the mildness of the potatoes and sweet potatoes.
The Creamy Element: Whisked Curds for Balance
To balance the various intense flavors and add a refreshing creaminess, whisked curds (dahi) are generously spooned over the potato and sweet potato mixture. The cool, smooth texture of the curds provides a delightful contrast to the warm, slightly crispy potato cubes and the zesty chutneys. The curds also help to mellow the spices, making the chaat well-rounded and palatable, especially for those who might prefer a less intense spice level.
The Finishing Touch: Aromatic Spices for a Zingy Punch
No chaat is complete without its signature sprinkle of aromatic spices. For Aloo Aur Shakarkand ki Chaat, a blend of black salt (sanchal), roasted cumin seeds (jeera) powder, red chili powder, and salt is evenly sprinkled over the prepared plate. Black salt adds a unique pungent note, roasted cumin powder provides a warm earthiness, and chili powder gives a final burst of heat. These spices not only enhance the flavor but also add to the visual appeal of the chaat, making it even more inviting.
Assembling and Serving: A Feast for the Senses
Once the golden-brown potato and sweet potato mixture is prepared and divided into equal portions, the assembly is quick and artistic. Each portion is placed on a serving plate, then topped evenly with the khajur imli ki chutney, green chutney, and whisked curds. The final touch is the even sprinkle of the spice mixture and a garnish of finely chopped coriander (dhania), which adds a fresh, herbaceous note and a vibrant splash of green. The Aloo Aur Shakarkand ki Chaat is best served immediately to ensure the potatoes maintain their slight crispness and all the flavors are at their peak, offering a delightful treat for the senses.

MY husband is very fond of eating shakarkand. Initially I used to serve it sprinkled with chaat masala and lemon juice. But since i served it garnished with sweet chutney and green chutney it has become his favourite. My daughter also likes it this way. They both found it very tasty.
