Ingredients
Main Recipe
2 tsp oil
1/4 cup chopped and boiled french beans
1/2 cup boiled green peas
1/4 cup blanched broccoli florets
leftover idlis , cut into cubes
4 cups soaked and cooked long grain rice (Basmati chawal)
1/4 cup coconut milk powder
2 tbsp finely chopped mint leaves (phudina)
1/4 cup finely chopped coriander (dhania)
salt to taste
For The Green Curry Paste
3 green chilli , roughly chopped
1 onion , roughly chopped
10 of ginger (adrak) , roughly chopped
1 cup chopped coriander (dhania)
1/2 tbsp lemon juice
2 tsp coriander (dhania) powder
1 tbsp cumin seeds (jeera) powder
2 lemongrass stalk , chopped
1 tsp salt
4 to 5 peppercorns (kalimirch)
Method
- Grind all the ingredients in a mortar or a food processor using a little water. Keep aside.
- This paste can be stored in an airtight container for a week or in the freezer in the refrigerator. Freeze for upto 3 months.
- Heat the oil in a wok; add the french beans, peas and broccoli and stir-fry for 3 to 4 minutes.
- Add the green curry paste and stir-fry for a couple of minutes.
- Add the rice, coconut milk powder, mint leave, coriander leaves and salt and stir-fry while mixing gently. Serve hot.

a very different rice and perfect definition of thai. Love the greens in this. The chillies and coconut milk give a great flavour and are very pleasing to the palate
