Main Ingredients
2 cups chopped tomato
1 cup chopped carrot
1/4 cup cooked macaroni
1 tbsp olive oil
1 tbsp butter
1 tbsp finely chopped garlic (lehsun)
1/2 cup chopped onion
1 tbsp dried oregano
1/2 tbsp dry red chilli flakes (paprika)
a pinch of sugar
salt to taste
For The Garnish
a sprig of parsley
Method
- Heat the olive oil and butter in a deep non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the tomatoes, carrots, oregano, chilli flakes, sugar and salt, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.
- Add 3 cups of water and mix well. Cover with a lid and cook on a medium flame for 10 to 12 minutes, while stirring occasionally.
- Allow the mixture to cool slightly and blend into a coarse mixture with the help of a hand blender.
- Transfer the mixture, back to the same non-stick pan, add the macaroni, mix well and bring to boil.
- Serve hot garnished with parsley.

Wow! This is something new. I tried this recipe and it is yumm.. The soft macaroni along with crunchy carrots gives a nice mouthfeel.. Also the herb totally changes and enhances the taste of the soup..

Loved this soup with crunchy carrots and tangy tomatoes. Adding herbs makes it really flavorful.

I tried this recipe, it was very tasty. Adding oregano is must. My husband loved it.
