Cucumber and Sesame Seeds Salad recipe, Kakdi Til Salad, healthy Indian Cucumber Sesame Salad

The Cucumber and Sesame Seeds Salad is a wonderfully refreshing and healthy Indian Cucumber Sesame Salad, commonly known as Kakdi Til Salad in many Indian households. This simple yet flavorful dish offers a delightful crunch and a burst of fresh taste, making it an ideal accompaniment to any meal or a light, guilt-free snack. Its quick preparation time and wholesome ingredients make it a favorite for those seeking nutritious and easy-to-make options in Indian cuisine.

At the heart of this vibrant salad are 2 cups of crisp cucumber cubes, providing a hydrating and cool base. Adding layers of texture and nutty flavor are 2 tbsp of roasted black sesame seeds (kala til), known for their distinct aroma, and 2 tbsp of roasted and crushed peanuts, which contribute a satisfying crunch and richness. The fresh herbaceous note comes from 2 tbsp of finely chopped coriander (dhania), tying all the flavors together and adding a bright green visual appeal to the salad.

What elevates this simple cucumber preparation into an Indian-style salad is the aromatic tempering, or 'tadka'. This flavor infusion begins by heating 1 tbsp of olive oil in a broad non-stick pan. Once warm, ½ tsp of cumin seeds (jeera), 1 green chilli (chopped or slit), and ¼ tsp of asafoetida (hing) are added. These spices are sautéed for a few seconds until the cumin seeds begin to crackle and release their enticing aroma, setting the stage for the salad's distinct Indian profile.

The assembly of the Cucumber and Sesame Seeds Salad is quick and straightforward, designed to preserve the freshness of the ingredients. As soon as the cumin seeds crackle from the tempering, the flame is immediately switched off. The cucumber cubes and salt to taste are then added to the pan, ensuring they are gently mixed with the warm aromatic oil without cooking the cucumber. Following this, the roasted black sesame seeds, roasted and crushed peanuts, and chopped coriander are incorporated, and the entire mixture is tossed well to evenly distribute the flavors and textures.

To truly enjoy the crispness and fresh flavors of this Kakdi Til Salad, it is essential to serve immediately after preparation. This ensures that the cucumber retains its firm texture and the ingredients remain vibrant, delivering the intended refreshing experience. The minimal cooking involved, primarily for the tempering, ensures that the nutrients in the fresh vegetables are well-preserved, making it a highly beneficial addition to any diet.

This healthy Indian Cucumber Sesame Salad is highly beneficial for various health considerations. For diabetics, its low glycemic index, high fiber from cucumber and seeds, and healthy fats from olive oil and peanuts make it an excellent choice. It supports heart health due to monounsaturated fats from peanuts and omega-3s from sesame seeds. During pregnancy, it provides hydration, essential nutrients, and fiber. For PCOS, its high fiber and low processed carbohydrate content can aid in managing blood sugar levels. Furthermore, its low-calorie, high-fiber, and satiating nature makes it a perfect addition for weight loss diets.
