Stuffed Bajre ke Parathe — also known as Bajra Chawli Paratha — is a rustic and wholesome Indian flatbread that combines the goodness of black millet with the earthy flavour of cowpeas (chawli or lobhia). This traditional dish is not only delicious but also packed with fibre, iron, and protein, making it a great choice for a nourishing meal.

 

To make the soft, pliable dough, mix 2 cups of bajra (black millet) flour, 1 tablespoon of oil, and a pinch of salt. Add just enough hot water to bring the dough together, kneading it until smooth. Divide it into eight equal portions and roll each one out into a thin circle about 4 inches in diameter. Lightly cook each bajra roti on both sides over a hot tava (griddle), and keep them aside.

 

The heart of this recipe lies in its flavourful stuffing. Combine ½ cup finely chopped chawli, ½ teaspoon green chillies, 1 teaspoon chopped garlic (lehsun), and 1 tablespoon chopped coriander (dhania) in a blender to form a coarse paste—no water needed. In a pan, heat 1 teaspoon oil, add a pinch of asafoetida (hing) and salt to taste, then sauté the mixture for 3 to 4 minutes until aromatic. Cool and divide the filling into four portions.

 

Now for the exciting part — assembling the parathas! Take one of the cooked bajra rotis, spread a portion of the spicy chawli filling evenly over it, and place another roti on top. Press the edges gently to seal in the stuffing. Repeat with the remaining rotis and filling to create four stuffed parathas ready to be cooked to perfection.

 

Heat a tava (griddle) again and cook each Stuffed Bajre ka Paratha on both sides, brushing lightly with melted unsalted butter (or ghee) until golden brown and crisp. The aroma of roasted bajra and spiced chawli makes this dish truly irresistible.

 

Serve your hot and hearty Bajra Chawli Parathas with a dollop of thick curd (yogurt) and your favourite Indian pickle. Every bite offers a delightful blend of nutty millet, spicy filling, and buttery crispness—a comforting, healthy meal that celebrates the rich flavours of traditional Indian cuisine.

Method

For the paratha
 

  1. Mix the bajra flour, wheat flour, oil and salt and enough hot water to make a soft dough.
  2. Knead well. Divide the dough into 8 equal portions.
  3. Roll out each portion of the dough thinly into circles of 200 mm. (4") diamete.
  4. Lightly cook the bajra rotis on a tava (griddle) on both sides. Keep aside.

For the stuffing
 

  1. Combine the chawli, green chillies, garlic and coriander in a blender or a food processor without using any water to make a coarse paste.
  2. Heat the oil in a pan, add the asafoetida and salt and the ground chawli mixture and sauté for 3 to 4 minutes.
  3. Cool and divide the mixture into 4 portions.

How to proceed
 

  1. Spread one portion of the filling on one cooked bajra roti. Then place another bajra roti on top and press the sides so that the filling gets sealed between the two rotis.
  2. Cook the stuffed roti on a tava (griddle) on both sides using a little ghee, till both sides are golden brown.
  3. Repeat for the remaining rotis and stuffing to make 3 more paraths/.
  4. Serve hot.
