Ingredients
For Paneer Amritsari Tikka
2 cups thin paneer (cottage cheese) cubes
salt and freshly ground black pepper to taste
oil for shallow frying
chaat masala for sprinkling
To Be Mixed Into A Marinade (using Approx. 3/4 Cup Water)
1/4 cup roasted besan (Bengal gram flour)
2 tbsp rice flour (chawal ka atta)
1 tbsp ginger-garlic (adrak-lehsun) paste
1/4 tsp carom seeds (ajwain)
1/2 tsp turmeric powder (haldi)
1/2 tbsp chilli powder
1 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp chaat masala
1 tsp garam masala
1/2 tbsp dried fenugreek leaves (kasuri methi)
1 tbsp finely chopped coriander (dhania)
1 tsp lemon juice
1/4 tsp freshly ground black pepper (kalimirch)
salt to taste
1 tsp chilli powder
1 tbsp ginger-garlic (adrak-lehsun) paste
2 tsp oil
salt to taste

Method
For paneer amritsari tikka
- To make paneer amritsari tikka recipe, sprinkle salt and pepper over the paneer cubes and rub it gently. Keep aside.
- Heat the oil in a broad non-stick pan, dip the paneer cubes in the marinade to coat well and shallow-fry a few pieces at a time.
- Shallow fry them on a medium flame, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
- Repeat steps 2 and 3 to fry the remaining paneer cubes.
- Sprinkle chaat masala evenly over them and serve paneer amritsari tikka recipe immediately.
