Here is a tangy icing that feels cool on the palate, giving a refreshing and exciting twist to any sponge cake. 1 tsp lemon juice
1/2 tsp grated lemon rind
a few drops lemon colour
a few drops lemon essence
1/4 cup soft butter
1 3/4 cups icing sugar
  1. Sieve the icing sugar in a deep bowl and keep aside.
  2. Combine the butter in a deep bowl and mix it with a help of a wooden spoon till light and smooth for 2 to 3 minutes.
  3. Add the icing sugar gradually and mix well.
  4. Add the lemon rind, lemon juice, lemon colour and lemon essence and mix well.
  5. Use as required.

Lemon butter icing, perfect for a plain vanilla sponge cake, with a lemony flavor, and bits of rind which is tasted on every bite. This icing can be used to decorate the cakes also.
