1. Ensure Proper Yeast Activation
Make sure the yeast and sugar mixture becomes frothy and bubbly before adding to the flour this means your yeast is active. Use warm water (not hot) for this step (around 38–43 °C / 100–110 °F).
2. Knead Dough Until Smooth and Elastic
Knead well so gluten forms this creates better structure and a crisp exterior while keeping the inside tender. Add water gradually to avoid a sticky or dry dough.
3. Rest Dough in a Warm Place
Let the dough rest covered with a damp cloth in a slightly warm spot. This helps the dough raise nicely which improves texture and crispiness when baked.
4. Shape Sticks Evenly
Try to cut and roll every bread stick to a uniform size and thickness this ensures they all bake evenly and crisp up similarly.
5. Don’t Add Excess Flour While Rolling
Rolling without too much flour on the surface (just lightly dust) prevents the sticks from becoming too dense and helps them stay crisp after baking.
6. Check Oven Timing and Temperature
Oven temperatures vary start checking the sticks around 20 minutes rather than waiting full time to avoid over-browning or drying out. A hot oven (like 200 °C / 400 °F) gives a nicer texture.
7. Brush with Olive Oil After Baking
This extra coating of olive oil after baking adds flavor and a slight sheen while helping them stay crisp a bit longer.
8. Store Properly for Maximum Crispness
Once completely cooled, store the bread sticks in an airtight container to maintain crispiness and prevent them from going soggy. (Similar techniques are used for storing other breadstick styles too)
