As good as a visit to Mexico! Try this delicious Spicy Mexican Pasta Bake, which is topped with the all-time favourite Mexican salsa sauce and loaded with cheese, which adds a smooth texture to the dish. The coriander and cumin flavoured white sauce adds more zing to this dish!


Serve along with Garlic Bread and Vegetable Cutlets .

Method
For the salsa
  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the capsicum and sauté on a medium flame for 1 minute.
  3. Add the tomatoes, chilli powder, salt and pepper, mix well and cook on a medium flame for 1 minute. Keep aside.
How to proceed
  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the capsicum, cumin seeds powder and chilli flakes and sauté on a medium flame for 2 minutes.
  3. Add the pasta, white sauce, coriander, salt and pepper and mix well.
  4. Pour the pasta in a greased baking dish, spread the prepared salsa on top and spread it evenly.
  5. Sprinkle cheese on top and bake in a pre-heated oven at 200°c (400°f) for 15 minutes.
  6. Serve hot.

I m going to try out this receipe today but wanted to know how can I bake this if I do not have oven at home

You dont have to actually bake it .All the ingredients are already cooked, so the baking is actually for the grilled taste , take a heavy tava , keep the dish with the pasta on the tawa , cover it .Watch so that it doesnt burn the base
