  1. Heat the butter in a non-stick kadhai, add the plain flour and sauté on a medium flame for 1 minute.
  2. Add all the vegetables, mix well and sauté on a medium flame for 2 minutes.
  3. Add the vegetable stock and salt, mix well and cook on a medium flame for 12 to 15 minutes or till the vegetables are cooked, while stirring occasionally.
  4. Add the fresh cream, parsley, pepper powder and cheese, mix well and cook on a medium flame for 3 to 4 minutes, while stirring continuously.
  5. Serve hot garnished with cheese.

This soup is so different from the regular vegetable soups. If you love cheese, you are going to love this too! It has such a wonderful flavour of cheese and cream, that you simply fall in love with it.
