Method

For the potato stuffing
 

  1. Heat the oil in a broad non-stick pan and add the mustard seeds and curry leaves.
  2. When the seeds crackle, add the garlic, ginger and green chillies and sauté on a medium flame for 30 seconds.
  3. Add the onions and sauté on a medium flame for 1 minute.
  4. Add the turmeric powder, potatoes, coriander, lemon juice and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Keep aside.


For the besan batter
 

  1. Combine all the ingredients in a bowl and make a batter using approximately ¾ cup of water. Keep aside.


How to proceed
 

  1. To make the ulta vada pav, slit each pav horizontally into 2.
  2. Apply ½ tsp garlic chutney on each side and spread.
  3. Apply 1 tbsp of the stuffing on each side and spread it.
  4. Close the bread and dip each bread into the batter and allow it to coat the mixture well.
  5. Deep fry in hot oil, till golden brown. Drain on absorbent paper and keep aside.
  6. Repeat steps 2 to 5 to deep-fry remaining 9 pavs.
  7. Cut each pav into 2 pieces and serve the ulta vada pav with dry garlic chutney and fried green chillies.
