Oats and Walnut Chikki is a modern, healthy twist on the classic Indian brittle. Made with oats, walnuts, jaggery, and nutty seeds, this snack is the perfect blend of crunch, sweetness, and nourishment. The preparation begins by dry roasting oats on a medium flame until they turn light golden and aromatic. This step enhances their flavor and ensures the chikki has a pleasant, crisp texture. In the same pan, jaggery (gur) is melted with a touch of ghee to form a sticky syrup that binds the ingredients together. The key here is to cook the jaggery on a low flame and stir continuously to achieve the perfect glossy consistency.

 

Once the jaggery syrup is ready, the roasted oats and chopped walnuts are mixed in, coating them evenly in the sweet, golden mixture. The addition of roasted flaxseeds (alsi) and sesame seeds (til) not only enhances the taste but also boosts the nutritional value — flaxseeds bring omega-3 fatty acids and fiber, while sesame seeds add calcium and a nutty aroma. Together, these ingredients make this oats jaggery chikki both delicious and wholesome.

 

The hot mixture is then quickly spread on a greased thali or flat surface and rolled into a thin sheet using a greased rolling pin. Greasing is essential, as the jaggery mixture tends to stick if not handled properly. Once flattened, the chikki is cut into neat squares while still warm, then left to cool completely. Method

for Oats and Walnut Chikki 
 

  1. Heat a broad non-stick pan, add the oats and dry roast on a medium flame for 4 minutes. Remove in a bowl and add the oats, walnuts, flaxseeds and sesame seeds and mix very well. Keep aside.

  2. In the same pan, heat the ghee, add the sticky jaggery and mix well. Cook on a slow flame for 3 minutes, while stirring continuously.

  3. When jiggery melt completely add oats mixture on same pan,  and mix it well, on low flame .

  4. Greased the rolling board and rolling pin

  5. Transfer the mixture immediately on the rolling board surface and roll the mixture into a 4” x 6” rectangle using a greased rolling pin.

  6. Cut into 12 equal square pieces of ½” x ½” using a sharp knife. Allow it to cool completely.

  7. Serve or store in an air-tight container and use as required.

How to make Oats and Walnut Chikki

 

    1. To make the Oats and Walnut Chikki | oats chikki with flaxseeds, sesame seeds | oats jaggery chikki | Heat a broad non-stick pan, add the 1 cup quick cooking oats.

    2. Dry roast on a medium flame for 4 minutes.

    3. Remove oats in a bowl.

    4. Add the 1/4 cup chopped walnuts (akhrot).

    5. Add the 2 tbsp roasted flaxseeds (alsi).

    6. Add the 2 tbsp roasted sesame seeds (til). and mix very well. Keep aside.

    7. Heat the 1 tsp ghee in a deep non-stick pan.

    8. Add the sticky 1/2 cup roughly chopped jaggery (gur).

    9. Mix well.

    10. Cook on a slow flame for 3 minutes, while stirring continuously.

    11. When jiggery melt completely add oats mixture on same pan.

    12. Mix it well, on low flame.

    13. Greased the rolling board and rolling pin.

    14. Transfer the mixture immediately on the rolling board surface.

    15. Roll the mixture into a 4” x 6” rectangle using a greased rolling pin.

    16. You can even out the edges first so you get all uniform square shaped pieces.

    17. Cut into 12 equal square pieces of ½” x ½” using a sharp knife. Allow it to cool completely.

    18. When cool completely then remove in a plate and use as required.

    19. Serve Oats and Walnut Chikki | oats chikki with flaxseeds, sesame seeds | oats jaggery chikki.

too good... my kiddo enjoyed every munch of this crunchy healthy snack. this chikki is on high demand amongst her friends. it can be made in advance and hence suits me as i can make and store it when time permits.

dont know what went wrong 1.jaggery did not melt so had to add a bit of water 2.then the whole thing just crumbled...did not keep its shape at all - just became granola 3. the taste is good though am game to try again if anyone can tell me what went wrong
