Oats and Walnut Chikki is a modern, healthy twist on the classic Indian brittle. Once the jaggery syrup is ready, the roasted oats and chopped walnuts are mixed in, coating them evenly in the sweet, golden mixture. Ingredients
for Oats and Walnut Chikki
1 cup quick cooking oats
1/4 cup chopped walnuts (akhrot)
1/2 cup roughly chopped jaggery (gur)
1 tsp ghee
2 tbsp roasted flaxseeds (alsi)
2 tbsp roasted sesame seeds (til)
2 tsp ghee for greasing
Method
for Oats and Walnut Chikki
Heat a broad non-stick pan, add the oats and dry roast on a medium flame for 4 minutes. Remove in a bowl and add the oats, walnuts, flaxseeds and sesame seeds and mix very well. Keep aside.
In the same pan, heat the ghee, add the sticky jaggery and mix well. Cook on a slow flame for 3 minutes, while stirring continuously.
When jiggery melt completely add oats mixture on same pan, and mix it well, on low flame .
Greased the rolling board and rolling pin
Transfer the mixture immediately on the rolling board surface and roll the mixture into a 4” x 6” rectangle using a greased rolling pin.
Cut into 12 equal square pieces of ½” x ½” using a sharp knife. Allow it to cool completely.
Serve or store in an air-tight container and use as required.

- This chikki stays fresh for 3 to 4 days when stored in an air-tight box at room temperature.

Add the sticky 1/2 cup roughly chopped jaggery (gur).

Mix well.

Cook on a slow flame for 3 minutes, while stirring continuously.

When jiggery melt completely add oats mixture on same pan.

Mix it well, on low flame.

Greased the rolling board and rolling pin.

Transfer the mixture immediately on the rolling board surface.

Roll the mixture into a 4” x 6” rectangle using a greased rolling pin.

You can even out the edges first so you get all uniform square shaped pieces.

Cut into 12 equal square pieces of ½” x ½” using a sharp knife. Allow it to cool completely.

When cool completely then remove in a plate and use as required.

too good... my kiddo enjoyed every munch of this crunchy healthy snack. this chikki is on high demand amongst her friends. it can be made in advance and hence suits me as i can make and store it when time permits.

dont know what went wrong 1.jaggery did not melt so had to add a bit of water 2.then the whole thing just crumbled...did not keep its shape at all - just became granola 3. the taste is good though am game to try again if anyone can tell me what went wrong
