Flour available in the Indian market is not strong flour, and it does not contain the appropriate amount of protein that is Gluten which is very important for bread making process.
Gluten is protein naturally found in wheat. This protein is what gives the bread its elasticity and softness. If this protein is less in the flour, the bread does not have the desired texture. Thus, a small amount of gluten powder (usually a pinch) helps in achieving delectable bread.
