Mouth-watering and delicious italian preparation of cooked fettuccine with a healthy dose of spinach and a luscious cottage cheese sauce. A generous sprinkling of grated cheese before baking, ensures a perfect finish to the baked fettuccine with spinach in paneer sauce. 1 1/2 cups cooked fettuccine
3/4 cup blanched and chopped spinach
1 tbsp oil
1/4 cup finely chopped onions
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
salt and black peppercorns (kalimirch) powder to taste
1/4 cup milk
5 tbsp grated processed cheese

To Be Blended Into A Smooth Paneer Sauce
1 cup grated fresh paneer (cottage cheese)
1 cup milk
salt to taste
1/2 tsp nutmeg (jaiphal) powder

For The Garnish
1/2 tsp dry red chilli flakes (paprika)
  1. Heat the oil in a broad non-stick pan, add the onions, garlic and green chillies and sauté on a medium flame for 1 minute.
  2. Add the spinach and salt and cook on a medium flame for 30 seconds, while stirirng occasionally.
  3. Add the fettuccine, paneer sauce and pepper, mix lightly and cook on a medium flame for 2 to 3 minutes, while tossing occasionally.
  4. Add the milk and 2 tbsp of cheese and mix well.
  5. Transfer the mixture into a baking dish, sprinkle the remaining 3 tbsp of the grated cheese evenly over it.
  6. Microwave on high for 4 to 5 minutes or bake in a pre-heated oven 180°c (360°f) for 15 minutes.
  7. Serve hot garnished with chilli flakes
