  1. Soak the sun-dried tomatoes in a bowl, in enough hot water for 20 minutes. Drain and finely chop them.
  2. Combine all the ingredients in a deep bowl and toss well.
  3. Serve immediately.

I made this pasta salad yesterday and it was delicious. Crunchy from walnuts, chewy from the penne pasta, and lovely taste and aroma from the garlic and my favourite Basil. Yummm.. This recipe is definitely going to make a come back very very soon in my kitchen and be made often. The only tip to make it more healthy and nutritious is to use 100% whole wheat penne pasta. But all in all, this recipe gets an A+ from me.
