This chutney is very versatile as it can be used as a spread, dip and goes well with idli and dosa. It can also be mixed with rice and had as a meal. It has all the health benefits of spring onion and can be very deceptive as it's difficult to identify the spring onion in it.

This recipe is an variation of classic andhra perugu pachadi. Snake gourd can be substituted with tomato and onion for a variety. This is best had with rice.

This chutney is mainly made with the ingredient which is usually thrown off. Lot of vitamins are hidden in the skin of the ridge gourd so don't throw away but make this wonderful chutney which matches well with rice, rotis,chapatis,sanwiches,dosas and idlis. Have a nice chutney day!!!
