Cake, the word itself is enough to make anyone drool instantly. Milk, curd, milk powder and butter are a few pre-requisite of cake making and thus they top the list of ingredients used to make a cake. However these ingredients contain the milk sugar – lactose which isn’t tolerable by a few who don’t have the enzyme ‘lactase’ for its breakdown. As a consequence, enjoying a wedge of delicious cake is a dream for many.

Here we have a tried a completely lactose free vegan cake made using almonds, Almond Milk, berries, coconut oil and seeds of pumpkin and sunflower. Thus aptly named as Almond Berry and Coconut Cake, is a wiser choice to add to the menu of a lactose intolerant. Baked to perfection in just 25 minutes, it’s sure to please you. All you need to do is remember to soak the almonds an hour in advance.

Here are a few substitutes to make a lactose free cake:
Ingredient Substitute
1. Milk Soya milk
2. Butter Coconut oil / Vegetable oil
3. Condensed milk Almond milk + sugar
4. Curds Nil (Can easily be avoided)

With these pointers in mind the sponge cake is ready for you to relish. But Alas! The whipped cream in between the sponge and as topping has to be completely avoided and there is no substitute to it. Hope you enjoy this piece of cake and you recommend it to others.
