Method

For railway patties
 

  1. To make railway patties, heat the oil in a deep non-stick, add ginger garlic paste and green chillies and sauté for few seconds.
  2. Add carrots, beetroot, french beans and green peas and cook on high flame for a minute.
  3. Remove from the flame, transfer the mixture to a plate and allow it to cool completely.
  4. Add mashed potatoes, turmeric powder, chilli powder, chaat masala, salt, black pepper powder, breadcrumbs and coriander. Mix well to form a patties mixture.
  5. Divide and roll the mixture into 14 equal portions and shape each portion into a 75 mm. (3”) flat oval.
  6. Dip each patties in the prepared slurry and roll in the bread crumbs till they are evenly coated from all the sides.
  7. Heat the oil in a kadhai and deep-fry each patties till it turns golden brown in colour from both the sides. Drain on absorbent paper.
  8. Serve railway patties immediately with tomato ketchup.
