Ingredients
For Quinoa Poha
3 cups cooked quinoa
2 tbsp oil or coconut oil
1 tsp mustard seeds ( rai / sarson)
1 tbsp finely chopped garlic (lehsun)
1 tbsp finely chopped green chillies
1/2 cup finely chopped onion
1/2 cup finely chopped tomato
1 tsp turmeric powder (haldi)
1/4 cup finely chopped coriander (dhania)
1 tsp lemon juice
salt to taste
Method
For quinoa poha
- To make quinoa poha, heat the oil in a broad non-stick pan and add the mustard seeds.
- When the seeds crackle, add the curry leaves, garlic and green chillies and sauté on a medium flame for 1 to 2 minutes.
- Add the onions and sauté on a medium flame for 1 to 2 minutes.
- Add the tomatoes, turmeric powder and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the cooked quinoa, coriander and lemon juice, mix well and cook on a medium flame 1 to 2 minutes, while stirring occasionally.
- Serve the quinoa poha hot.
