Ingredients
For Masala Bhatura
2 cups plain flour (maida)
2 tbsp semolina (rava / sooji)
1 cup boiled peeled and grated potatoes
5 tbsp curd (dahi)
2 tbsp finely chopped coriander (dhania)
1 1/2 tsp chilli powder
1/2 tsp turmeric powder (haldi)
1 tsp coriander (dhania) powder
1/4 tsp garam masala
1 tbsp oil
salt to taste
plain flour (maida) for rolling
oil for deep-frying
Method
For masala bhatura
- To make masala bhatura, combine all the ingredients in a deep bowl and knead to make a soft dough using approx. ¼ cup of water.
- Cover the dough with a wet muslin cloth and rest the dough for 20 to 30 minutes.
- Divide the dough into 16 equal portions and roll each portion into a 150 mm. (6”) diameter circle using a little plain flour for rolling.
- Heat the oil in a deep non-stick pan and deep-fry the bhatura, one at a time, till they turn golden brown in colour from both sides.
- Serve the masala bhatura immediately with chole.
