For chocolate coconut cake
 

  1. To make eggless chocolate coconut cake, combine soft butter and brown sugar in a deep bowl. Whisk well until light and fluffy.
  2. Add condensed milk, vanilla extract and again whisk it well.
  3. Add desiccated coconut, chocolate chips and milk. Mix well.
  4. Add plain flour, baking powder and baking soda. Fold in gently using a spatula.
  5. Pour into a 8" x 3" greased and dusted loaf cake tin.
  6. Bake in a pre-heated oven at 180°c (360°f) for 25 to 30 minutes, until the cake is golden brown in colour or a knife inserted in the cake comes out clean.
  7. Once baked, remove and loosen the edges of the cake using a knife. Demould and cut the cake loaf into 12 equal slices.
  8. Serve eggless chocolate coconut cake.
