Ingredients
For The Spinach Layer
2 1/2 cups finely chopped spinach (palak)
2 tsp butter
1/4 cup finely chopped onion
1 tsp finely chopped green chillies
1 cup finely chopped fenugreek leaves (methi)
salt to taste
1 cup white sauce
For The Paneer Layer
1/2 cup crumbled paneer (cottage cheese)
2 bread , torn into pieces
3 tbsp curd (dahi)
1/2 cup boiled and mashed potatoes
2 tsp finely chopped green chillies
2 tbsp chopped coriander (dhania)
salt to taste
Other Ingredients
1/4 cup grated processed cheese
Method
For the spinach layer
- Heat the butter in a deep non-stick pan, add the onions and green chillies and sauté on a medium flame for 1 minute.
- Add the spinach, fenugreek leaves and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Switch off the flame, add the white sauce, mix well and keep aside.
For the paneer layer
- Combine the bread and curds, in a deep bowl and mix well.
- Add the potatoes, paneer, green chillies, coriander and salt and mix well and keep aside.
How to proceed
- Put the paneer mixture in a baking dish and spread it evenly with the help of a spoon.
- Pour the spinach mixture over it and spread it evenly over it.
- Sprinkle cheese evenly over it and bake in a pre-heated oven at 200°c (400° f) for 15 minutes.
- Serve immediately.

Layered spinach.. the combination of spinach and fenugreek is just amazing.. the paneer.. cheese and the mashed potatoes.. gives a nice creamy taste to the dish..
