Method

For the spinach layer
 

  1. Heat the butter in a deep non-stick pan, add the onions and green chillies and sauté on a medium flame for 1 minute.
  2. Add the spinach, fenugreek leaves and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  3. Switch off the flame, add the white sauce, mix well and keep aside.


For the paneer layer
 

  1. Combine the bread and curds, in a deep bowl and mix well.
  2. Add the potatoes, paneer, green chillies, coriander and salt and mix well and keep aside.


How to proceed
 

  1. Put the paneer mixture in a baking dish and spread it evenly with the help of a spoon.
  2. Pour the spinach mixture over it and spread it evenly over it.
  3. Sprinkle cheese evenly over it and bake in a pre-heated oven at 200°c (400° f) for 15 minutes.
  4. Serve immediately.

For the spinach layer

 

    1. To make the spinach layer, Heat the 2 tsp butter in a deep non-stick pan, add the 1/4 cup finely chopped onion and 1 tsp finely chopped green chillies and sauté on a medium flame for 1 minute.

    2. Add the 2 1/2 cups finely chopped spinach (palak), 1 cup finely chopped fenugreek leaves (methi) and salt to taste mix well and cook on a medium flame for 2 minutes, while stirring occasionally.

    3. Switch off the flame, add the 1 cup white sauce, mix well and keep aside.

For the paneer layer

 

    1. To make the paneer layer, in a deep bowl, Put the 2 bread , torn into pieces.

    2. Add the 3 tbsp curd (dahi).

    3. Mix well.

    4. Add the 1/2 cup boiled and mashed potatoes, 1/2 cup crumbled paneer (cottage cheese), 2 tsp finely chopped green chillies, 2 tbsp chopped coriander (dhania) and salt to taste and mix well and keep aside.

Layered spinach.. the combination of spinach and fenugreek is just amazing.. the paneer.. cheese and the mashed potatoes.. gives a nice creamy taste to the dish..
