Ingredients
For Lehsuni Aloo Methi Sabzi
4 tbsp oil
1/2 tsp cumin seeds (jeera)
1 black cardamom (badi elaichi)
3 black peppercorns (kalimirch)
1 whole dry Kashmiri red chilli
1/2 cup finely chopped onion
1 tbsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1/2 cup tomato pulp
1/2 tsp turmeric powder (haldi)
1 cup potato cubes
1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp chilli powder
1/2 tsp garam masala
2 cups finely chopped fenugreek leaves (methi)
2 tbsp fresh cream
Method
For lehsuni aloo methi sabzi
- To make lehsuni aloo methi sabzi, heat oil in a deep pan, add cumin seeds, cardamom, cloves, black peppercorns, bayleaf and kashmiri dry red chilli. Sauté for a few seconds.
- Add onions and sauté on medium flame for 2 to 3 minutes. Add garlic and green chillies, sauté for a minute.
- Add tomato pulp and turmeric, mix well, and cook on medium flame for 2 minutes.
- Add potato cubes, ½ cup hot water, mix well and cover and cook on medium flame for 10 minutes.
- Add coriander cumin seeds powder, chilli powder, garam masala and mix well.
- Add fenugreek leaves, salt to taste and ½ cup hot water, mix well and cook for 5 minutes.
- Add fresh cream, mix well, cover and cook on medium flame for 8 to 10 minutes.
- Serve thelehsuni aloo methi sabzi with roti or rice of your choice.
