Ingredients
For Rice Paper Dumplings
1 tsp sesame seeds (til)
1 tsp black sesame seeds (kala til)
oil for cooking
For The Stuffing
2 tbsp oil
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
1/4 cup thinly sliced carrots
1/2 cup shredded cabbage
1/2 cup thinly sliced capsicum
1/2 cup boiled noodles
1/4 cup finely chopped spring onions

1 tsp red chilli sauce
1 tsp soy sauce
1 tsp vinegar
salt to taste
Method
For the stuffing
- To make rice paper dumplings, heat the oil in a wok or a deep non-stick kadhai on a high flame.
- Add the garlic and ginger, sauté on a high flame for few seconds.
- Add all the remaining vegetables, noodles and mix well.
- Add schezwan chutney, red chilli sauce, soya sauce, vinegar and salt to taste.
- Sauté on a high flame for 2 minutes.
- Garnish with spring onions and keep aside.
How to proceed
- Take a sheet of rice paper and dip it in water for few seconds or till it softens.
- Place it on a flat, dry surface and put a portion of the stuffing on one edge of the wrapper and fold to make a spring roll.
- Repeat steps to make remaining 7 rice paper dumplings.
- Heat little oil in a broad non-stick pan, cook the dumplings from both the sides until golden brown and crisp.
- Garnish with sesame seeds and serve the rice paper dumplings hot.
