For quick kung pao potatoes
 

  1. To make quick kung pao potatoes, heat the oil for deep frying in a deep pan and deep-fry the french fries till golden brown in colour. Drain on an absorbent paper. Keep aside.
  2. Heat the oil in a broad non-stick pan, add the garlic and ginger and sauté on a medium flame for a few seconds.
  3. Add the spring onion whites and greens and sauté on a medium flame for 1 minute.
  4. Add the schezuan sauce, red chilli sauce, soy sauce, hot and sweet sauce and salt, mix well and cook on a medium flame for 1 minute.
  5. Add the deep-fried french fries, mix gently and cook on a medium flame for 2 minutes.
  6. Serve the quick kung pao potatoes immediately garnished with spring onions and black sesame seeds.
