Ingredients
For Bean Sprouts and Capsicum Salad
1 1/2 cups bean sprouts
1/2 cup thinly sliced coloured capsicum
salt to taste
For The Spicy Dressing
1 1/2 tsp extra virgin olive oil or
1 tsp finely chopped garlic (lehsun)
2 tsp vinegar
1 tsp soy sauce
1/2 tsp chilli powder
1 1/2 tbsp coarsely roasted and crushed peanuts
salt to taste
For The Garnish
1 tbsp finely chopped spring onion greens
1 tbsp finely chopped coriander (dhania)
Method
For the spicy dressing
- Heat the oil in a small non-stick pan, add the garlic and sauté on a medium flame for 15 seconds.
- Remove from the flame and keep aside to cool slightly.
- Add the vinegar, soya sauce, chilli powder, peanuts and mix well. Keep aside.
How to proceed
- To make bean sprouts and capsicum salad recipe, combine the bean sprouts, capsicum, spicy dressing and salt in a bowl and toss well.
- Serve the bean sprouts and capsicum salad recipe immediately or refrigerate for 30 minutes and serve chilled.
