Tamarind Paste is a must-have ingredient if you wish to explore the cuisine of South and Western India. It lends a nice homely tang to many curries and gravies.
Remember to soak the tamarind in warm water so that it gets soaked well and you can extract the maximum pulp out of it. You can store this homemade tamarind paste in the fridge and use as required.

- Combine the tamarind and warm water in a bowl, cover with a lid and keep aside for 30 minutes.
- Rub the tamarind well using your fingers till all the pulp has been extracted.
- Strain the mixture using a strainer in a deep bowl.
- Use as required.
