Method
For the spinach topping
  1. Heat the butter in a non–stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the green chilli paste and sauté on a medium flame for a few seconds.
  3. Add the spinach, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Add the plain flour, mix well and cook on a medium flame for 30 seconds, while stirring occasionally.
  5. Add the milk, salt and pepper, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside to cool slightly.
For the sweet corn topping
  1. Heat the butter in a broad non–stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the green chilli paste and saute on a medium flame for 30 seconds.
  3. Add the plain flour and cook on a medium flame for 1 minute.
  4. Add the milk, mix well and cook on a medium flame for 30 seconds.
  5. Add the corn, sugar, salt and pepper, mix well and cook on a medium flame for 1 minute, while stirring continuously. Keep aside to cool slightly.
How to proceed
  1. To make spinach and corn crackers, place the cream cracker biscuits on a clean, dry surface and spread ½ tbsp of the sweet corn topping on one half of the cracker.
  2. Spread ½ tbsp of the spinach topping on the other half of the cracker.
  3. Finally sprinkle ½ tsp of cheese evenly over each cracker biscuit.
  4. Serve the spinach and corn crackers immediately.
