Ingredients

1/2 cup sugar
1/2 cup coarsely powdered cashewnuts (kaju)
1/4 cup coarsely powdered almonds
oil to grease
Method
    Main Procedure
  1. Heat the sugar in a heavy bottomed pan without adding anything.
  2. Allow the sugar to melt and caramelize till it is golden brown in colour.
  3. Add the nuts, mix well and take the mixture off the fire immediately.
  4. Oil a slab or working surface, 2 knives and small katoris.
  5. Pour the mixture on a slab and work it quickly and carefully with 2 greased knives until it forms a dough.
  6. Divide the dough into 4 equal portions and roll out each portion thinly as quickly as possible. [approx. 25 mm. (5") in diameter]
  7. Press the rolled dough on the back of an oiled bowl so as to form a basket in the shape of the katori.
  8. Carefully unmould the basket from the bowl.
  9. Repeat to make 3 more baskets quickly as the mixture will harden very quickly.
