The combination of zesty lemon and cool mint creates a vibrant, flavorful experience that's both delicious and incredibly soothing. Plus, they’re a great way to stay hydrated and can even help with an upset stomach.

 

The recipe starts by combining all the main ingredients in a mixer. You’ll need ¼ cup lemon juice for a tangy kick, ½ cup powdered sugar to balance the tartness, and ½ cup mint leaves for that fresh, aromatic flavor. A teaspoon of black salt is added to give it a unique, savory depth, a common element in many traditional Indian drinks and snacks. Finally, you’ll add 4 cups of chilled water to create the liquid base for your lollies.

 

After adding all the ingredients to the mixer, blend the mixture until it's perfectly smooth. This step ensures that the mint leaves are completely broken down, infusing the entire liquid with their flavor. Once blended, you need to strain the mixture. This is an important step that removes any remaining fibrous bits of mint, giving you a clear, smooth liquid for your popsicles. This makes the final lolly's texture much more pleasant.

 

Now it's time to prepare the lollies. You'll need 6 lolly moulds for this recipe. Before pouring in the liquid, add ½ tsp soaked subza seeds to each mould. These tiny seeds, also known as basil seeds, become gelatinous when soaked and add a fun, tapioca-like texture to the popsicles. They also have a cooling effect on the body, making them a popular addition to summer drinks.

 

With the subza seeds in place, pour equal quantities of the strained lemon-mint mixture into each of the 6 moulds. Be careful not to overfill them. Once filled, cover the moulds with their lids or a secure top and place them in the freezer. The lollies need to freeze for at least 4 to 5 hours to become solid.1 It’s best to leave them overnight to ensure they are completely frozen through.

 

After the freezing time is complete, take the moulds out of the freezer. To easily remove the lollies, you can run the outside of the moulds under a little warm water for a few seconds. This helps the lollies demould smoothly. Once removed, serve them immediately to enjoy their cool, tangy, and minty flavor. These sweet lollies are great for cooling down, but they also serve a purpose by helping to cleanse your palate and soothe your stomach.

  1. Combine all the ingredients, except the subza seeds, in a mixer jar and blend till smooth.
  2. Strain and pour equal quantities of the juice and ½ tsp soaked subza seeds into each of the 6 lolly moulds.
  3. Cover and freeze for at least 4 to 5 hours.
  4. Demould and serve immediately.
