Ingredients
For Bean Sprouts Fried Rice
3/4 cup bean sprouts
2 cups cooked brown rice , refer handy tip
2 tsp oil
1 1/2 tsp finely chopped green chillies
1/2 cup thinly sliced capsicum
1/2 cup finely chopped spring onions whites
1/2 cup diagonally cut and blanched French beans
1/2 cup thinly sliced carrots
1 tbsp finely chopped celery (ajmoda)
1 tsp soy sauce
1 tsp vinegar
salt to taste
For The Garnish
1 tbsp finely chopped spring onion greens
Method
For bean sprouts fried rice
- To make bean sprouts fried rice, heat the oil in a broad non-stick pan, add the green chillies, capsicum and spring onion whites and sauté on a high flame for 1 to 2 minutes.
- Add the french beans, carrots, bean sprouts and celery and sauté on a high flame for 1 to 2 minutes.
- Add the brown rice, soy sauce, vinegar and salt and toss gently and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Serve the bean sprouts fried rice immediately garnished with spring onion greens.
Handy tip:
- To make 2 cups of cooked brown rice, boil enough water in a deep pan, add the salt, 1 tsp of oil and approx. ¾ cup of soaked and drained brown rice and cook till the rice is 85% cooked. Drain completely and use as required.
