Crackling Spinach

As the name suggests this spinach crackles in your mouth. Even those who do not care much for spinach are sure to like this deep fried shredded spinach enlivened with sesame seeds.

Serves 4.


Ingredients


4 cups spinach, finely shredded
4 tsp sesame seeds (til)
4 tsp chopped garlic
2 tsp sugar
1 tsp oil
salt to taste
oil for deep-frying

Method
  1. Place the shredded spinach in a metal strainer and dip it in hot oil till it is crisp. (This saves the hassle of gathering the shredded spinach from the hot oil).
  2. Drain the fried spinach on absorbent paper to soak all the excess oil.
  3. Heat 1 teaspoon of oil in a pan. Add the garlic and sesame seeds and allow the sesame seeds to crackle.
  4. Add the fried spinach, sugar and salt and mix very lightly.
  5. Serve immediately.

Tips
  1. To get crisp spinach, dry the spinach leaves individually and then shred them finely using a very sharp knife.
  2. Do not heat the oil too much as the shredded spinach tends to burn quickly.
