To Be Mixed Into A Dry Fruit Stuffing
1/4 cup chopped raisins (kismis)
1/4 cup chopped cashew nut (kaju)

For The Tikkis
1 1/2 cups fresh crumbled paneer (cottage cheese)
1/4 cup finely chopped coriander (dhania)
1 tbsp finely chopped green chillies
salt to taste
a pinch of powdered sugar
cornflour for rolling
oil for cooking

For Serving With Paneer Tikki
tomato ketchup
green chutney


For paneer tikki

  1. To make {span class="bold1"}paneer tikki{/span}, place the paneer in a dish, knead it very well, till it is smooth like a dough.
  2. Add the coriander, green chillies, salt and powdered sugar and mix well.
  3. Divide the mixture into 10 equal portions and shape each portion into a small round.
  4. Press a little in the centre of each round to make a depression, place 1½ tsp of the dry fruit stuffing in it and again shape them into a round ball and then flatten it lightly between your palms. Roll it lightly in cornflour.
  5. Repeat step 4 to make 9 more tikkis.
  6. Heat the oil in a non-stick tava (griddle) and cook a few tikkis at a time till they are golden brown in colour from both the sides.
  7. Serve the {span class="bold1"}paneer tikki{/span} hot with tomato ketchup or green chutney.
