Ingredients
For Spinach Puri
1/4 cup spinach (palak) puree
1 cup whole wheat flour (gehun ka atta)
1 1/2 tbsp semolina (rava / sooji)
1/2 tsp ginger-garlic (adrak-lehsun) paste
1 tsp green chilli paste
1/2 tsp carom seeds (ajwain)
1 tsp sesame seeds (til)
1/2 tsp coriander-cumin seeds (dhania-jeera) powder
salt to taste
oil for deep frying
Method
For spinach puri
- To make spinach puri, combine all the ingredients in a deep bowl and knead into a stiff dough using approx. 1/4 cup water.
- Divide the dough into 12 equal portions and roll out each portion of the dough into a 100 mm. (4 inch) diameter circle suing little oil for rolling.
- Heat the oil in a deep non-stick kadhai and deep-fry, a few puris at a time on a medium flame, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
- Serve the spinach puri immediately.
