For Mexican Fried Rice
3 cups cooked rice (chawal)
2 tbsp oil
1/2 cup thinly sliced onions
1/2 cup finely chopped tomatoes
1/2 cup thinly sliced capsicum
salt to taste
1 cup boiled mixed vegetables

To Be Ground In To A Coarse Chilli-garlic Paste
5 whole dry kashmiri red chillies
4 to 5 garlic (lehsun) cloves


For mexican fried rice

  1. To make {span class="bold1"}mexican fried rice{/span}, heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the prepared chilli-garlic paste, tomatoes and capsicum and sauté on a medium flame for 2 to 3 minutes.
  3. Add the mixed vegetables and 1 tbsp of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Add the rice and salt to taste, mix well and cook no a medium flame for 2 to 3 minutes, while stirring occasionally.
  5. Serve the {span class="bold1"}mexican fried rice{/span} hot.
