Ingredients
For Instant Suji Handvo
1 cup semolina (rava / sooji)
1/2 cup curd (dahi)
1/4 cup chopped and boiled mixed vegetables
1/4 cup grated beetroot
1/4 cup grated carrot
1/4 cup grated bottle gourd (doodhi / lauki)
2 tsp ginger-garlic (adrak-lehsun) paste
1 tsp finely chopped green chillies
2 tbsp finely chopped coriander (dhania)
1 tsp sugar
salt to taste
3/4 cup water
1 tsp fruit salt
Other Ingredients
6 tsp oil
1 1/2 tsp mustard seeds ( rai / sarson)
1 1/2 tsp sesame seeds (til)
10 to 12 curry leaves (kadi patta)
For Serving
Method
For instant suji handvo
- To make instant suji handvo, combine rava, dahi and ½ cup of water. Mix well and keep aside for 5 minutes.
- Add the mixed vegetable, beetroot, carrot, bottle gourd, ginger garlic paste, green chillies, coriander, sugar, salt to taste and mix well.
- Now add eno, ¼ cup water and mix gently.
- Heat 2 tsp oil in a kadhai, add mustard seeds, sesame seeds and 2 to 3 curry leaves.
- Once crackled, add the handva batter and cover with a lid and cook on a medium flame for 3 to 4 minutes.
- Flip and cook on both the sides until golden brown and crisp.
- Serve instant suji handvo hot with green chutney.
