Ingredients
For The Stuffing
2 tbsp butter
2 tbsp finely chopped garlic (lehsun)
1/2 cup chopped onion
1/2 cup boiled sweet corn kernels (makai ke dane)
1/2 cup chopped coloured capsicum
1/2 cup finely chopped zucchini
1 tbsp tomato ketchup
1 tbsp hot and sweet chilli sauce
1 tsp dried mixed herbs
2 tsp dry red chilli flakes (paprika)
salt to taste
For The White Sauce
1 tbsp butter
1 tbsp plain flour (maida)
1 cup milk
salt and to taste
For The Tomato Sauce
1 1/2 cups fresh tomato pulp
1 tbsp olive oil
1 tsp finely chopped garlic (lehsun)
1/2 cup finely chopped onion
1/2 tsp dried oregano
1 tsp dry red chilli flakes (paprika)
2 tbsp tomato ketchup
1 tsp chilli powder
salt to taste
1/2 tsp sugar
Other Ingredients For Bread Lasagna
16 bread slices
1 1/4 cups grated processed cheese
1 1/2 tbsp finely chopped basil leaves
1/2 tsp dried oregano
Method
For the stuffing
- Heat the butter in a broad non- stick pan, add the garlic and onions and sauté on a medium flame for 1 minute.
- Add the coloured capsicum and sauté on a medium flame for 1 minute.
- Add the zucchini and corn and sauté on a medium flame for 2 minutes.
- Add the tomato ketchup, hot and sweet chilli sauce, oregano , chilli flakes and salt and sauté on a medium flame for 1 minute, while stirring occasionally. Keep aside.
For the white sauce
- Heat the butter in a broad non-stick pan, add the plain flour and cook on a slow flame for 1 minute, while stirring continuously.
- Add the milk, mix well and cook on a medium flame for 3 to 4 minutes, or till the sauce thickens, while stirring continuously.
- Add the salt and pepper, mix well and cook on a medium flame for 1 more minute. Keep aside.
For the tomato sauce
- Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
- Add the onions and sauté on a medium flame for 1 to 2 minutes.
- Add the tomato pulp, oregano, chilli flakes, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 5 to 6 minutes, while stirring occasionally.
- Add the sugar, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.
How to proceed
- To make bread lasagna, divide the stuffing into 3 equal portions. Keep aside.
- Take 16 bread slices, trim the edges using a sharp knife, roll it thinly using a rolling pin. Keep aside.
- Take a baking square dish.
- Pour ¼ cup of prepared tomato sauce evenly over it.
- Pour ½ cup of prepared white sauce evenly over it.
- Arrange 4 slices overlapping each other.
- Pour ¼ cup prepared tomato sauce and spread it evenly.
- Pour one portion of the vegetable and spread it evenly.
- Pour ¼ cup of prepared white sauce evenly over it and spread it.
- Sprinkle ¼ cup of cheese evenly over it.
- Put ½ tbsp. Basil leaves evenly over it.
- Now repeat steps 4 to 11 to make 2 more layers.
- Finally add the remaining prepared tomato sauce and spread it evenly.
- Sprinkle the remaining cheese, oregano and chilli flakes evenly over it.
- Bake in a pre-heated oven at 180°c (360°f) for 20 minutes.
- Serve the bread lasagna hot.
