For vegetable upma
 

  1. To make vegetable upma, heat the oil in a deep non-stick pan, add the mustard seeds, urad dal, asafoetida, onions and curry leaves and sauté on a medium flame for 1 to 2 minutes.
  2. Add the semolina and sauté on a medium flame for 2 to 3 minutes.
  3. Add the 3½ cups of hot water, mixed vegetables, ginger-green chilli paste and salt, mix well and cook on medium flame for 2 minute, while stirring occasionally.
  4. Add the coriander and lemon juice, mix well and cook on medium flame for 1 minute, while stirring occasionally.
  5. Serve the vegetable upma immediately.
