For the stock
 

  1. Combine the moong dal, tomatoes, onions and 3 cups of water in a pressure cooker and pressure cook for 2 whistles.
  2. Allow the steam to escape before opening the lid.
  3. Blend the mixture using a blender till smooth. Keep aside.


How to proceed
 

  1. Heat the oil in a deep pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add all the vegetables, except the tomatoes and sauté on a medium flame for 1 to 2 minutes.
  3. Add the prepared stock and tomatoes, mix well and cook on a medium flame for 4 minutes, while stirring occasionally.
  4. Add the tomato ketchup, salt and pepper, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  5. Serve hot.
