Ingredients
For Veg Mayo Grilled Sandwich
1 tbsp butter
1 cup boiled and peeled potato slices
1/4 cup finely chopped onion
3/4 cup finely chopped coloured capsicum
1/4 cup boiled sweet corn kernels (makai ke dane)
1/2 cup grated carrot
1/2 tsp black peppercorns (kalimirch) powder
1 tbsp dry red chilli flakes (paprika)
1 tbsp dried oregano
salt to taste
1/2 cup grated processed cheese
1/2 cup mayonnaise
16 bread slices
8 tsp butter for spreading
8 tsp green chutney
8 tbsp butter for cooking
For Serving With Veg Mayo Grilled Sandwich
Method
For veg mayo grilled sandwich
- To make veg mayo grilled sandwich, in a broad non-stick pan, heat butter, add onions, potatoes, coloured capsicum, grated carrot, boiled corn, black pepper, chilli flakes, oregano and salt and sauté on a medium flame for 2 minutes.
- Transfer into a deep bowl, add grated cheese and mayonnaise and mix well.
- Divide the stuffing into 8 equal portions.
- Take 2 bread slices and place them on a clean, dry surface and apply 1 tsp butter and 1 tsp green chutney on each slice of the bread.
- Put a portion of the stuffing on one slice and cover it with the slice with the buttered-chutney side facing downwards and press it lightly.
- Heat a grill toaster, grease the grill toaster using 1 tbsp butter and place the sandwich in the grill toaster and cook on a medium flame, till it turns brown and crisp from both the sides.
- Remove and cut into half using sharp knife.
- Serve the veg mayo grilled sandwich immediately with tomato ketchup and french fries.
