Ingredients
For Veg Crispy
3 cups mixed vegetable strips (capsicum , cauliflower and baby corn)
oil for deep-frying
1 tbsp oil
1 tbsp finely chopped garlic (lehsun)
1/2 cup chopped spring onions (whites and greens)
salt to taste
3 tbsp schezwan sauce
To Be Mixed Together Into A Thick Batter (using Approx. 1/2 Cup Of Water)
1/2 cup cornflour
1/2 cup plain flour (maida)
1 tsp ginger-garlic (adrak-lehsun) paste
1/2 tsp freshly ground black pepper (kalimirch)
1 tsp lemon juice
salt to taste
Method
For veg crispy
- To make veg crispy, heat the oil in a deep non-stick pan. Dip each vegetable strip into the batter and deep-fry in hot oil, a few at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper. Keep these deep-fried vegetables aside.
- Heat the oil in a non-stick kadhai or a broad non-stick pan on a high flame till it smokes.
- Add the garlic and sauté on a high flame for few seconds.
- Add the spring onions and salt and sauté on a high flame for 1 minute.
- Add the schezwan sauce and cook on a high flame for 30 seconds, while stirring continuously.
- Add the fried vegetables and toss gently.
- Serve the veg crispy immediately.
