Ingredients
For Khakhra Chivda
2 cups coarsely crushed whole wheat khakhra
4 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)
1/4 cup roasted chana dal (daria)
1/4 cup roasted peanuts , deskinned
3 tbsp chopped cashew nut (kaju)
6 to 7 curry leaves (kadi patta)
1/2 tsp turmeric powder (haldi)
1/2 tsp chilli powder
salt to taste
1 1/2 tbsp powdered sugar
3 tbsp sev
Method
- To make khakhra chivda, heat the oil in a deep non-stick pan and add the mustard seeds.
- When the seeds crackle, add the asafoetida, roasted chana dal, peanuts and cashewnuts, mix well and cook on a medium flame for 1 to 2 minutes or till the they turn light brown in colour, while stirring occasionally.
- Add the curry leaves, turmeric powder and chilli powder, mix well and cook on a medium flame for a few seconds.
- Add the khakhra, mix well and cook on a medium flame for 1 minute, while stirring continuously.
- Switch off the flame, add the salt and powdered sugar and mix well. Keep the khakhra chivda aside to cool completely.
- Sprinkle sev and toss well.
- Store the khakhra chivda in an air-tight container, and pack in an air-tight tiffin box.
