Ingredients
For Baked Potato Wedges
4 cups unpeeled raw potato wedges
1 tbsp olive oil
2 tbsp melted butter
1 tbsp cornflour
1/2 tsp dried oregano
1 tsp dry red chilli flakes (paprika)
1/2 tsp dried mixed herbs
1/2 tsp dried rosemary
2 tsp finely chopped garlic (lehsun)
salt and to taste
parmesan cheese for garnish
1/2 tbsp finely chopped parsley /
Method
For baked potato wedges
- To make baked potato wedges, combine olive oil, melted butter, cornflour, oregano, chilli flakes, mixed herbs, rosemary, garlic, salt and pepper in a deep bowl and mix well.
- Add the potato wedges and toss it well till the herb marinade coats the potatoes completely.
- Place the herbed potatoes on a lined baking tray and bake in a pre-heated oven at 200°c (400°f) for 30-35 minutes or until they are crisp, while turning once in between.
- Serve the baked potato wedges immediately garnished with parmesan cheese and coriander with a dip of your choice.
