  1. To make peri peri masala, combine all the ingredients in a mixer jar.
  2. Blend till it becomes fine powder.
  3. Transfer the peri peri masala into an air-tight container. It stays fresh upto 1 month when refrigerated.
  4. Use the peri peri masala as required.

How to make Peri Peri masala:

  2. Add 2 tsp dry red chilli flakes (paprika).
  3. Add 3 tsp garlic (lehsun) powder.
  4. Add 1 tsp ginger powder.
  5. Add 2 tsp onion powder.
  6. Add 2 tsp amchur powder. You can also use chaat masala.
  7. Add 4 tsp dried oregano.
  8. Add 1 tsp black pepper powder.
  9. Add 2 tsp sugar to balance the strong flavours of the  Peri Peri masala.
  10. Add ½ tsp black salt. It is also called as sanchal, it gives a distinct flavour which is unique when compared to the table salt. 
  11. Add ½ tsp salt to taste.
  12. Blend till it becomes fine powder.
  13. Transfer the peri peri masala | piri piri spice mix | Indian style peri peri | into an air tight container and use as required. The shelf life of this  Peri Peri masala is about 1 month if kept refrigerated.

tips to make peri peri masala

  1. You can use this peri peri masala as a seasoning for French fries.
  2. If you are jain you can skip the garlic and onion powder.
  3. Sugar is added to balance out the flavours.
  4. Instead of chilli flakes you can also add red chilli powder.

Madam Tarala Dalam, What is the essential difference if peri - peri chilli powder is used in the masala ? Given purposes of used spices are really guiding factors to make tailor made peri - peri masala. Thank you for the academic information.

I use peri peri masala for marinating seafood also. I have added dhania and jeera powder to add more flavour to this recipe. To make it more colorful I use Spanish sweet paprika.
