2 tbsp butter
1/3 cup onion rings
3/4 cup capsicum rings , cut into halves
1/2 tbsp finely chopped garlic (lehsun)
3/4 cup blanched and chopped tomatoes
1/2 tsp chilli powder
1/2 tsp sugar
1 cup baked beans
1 1/2 cups cooked macaroni
1 tsp dried oregano
2 tbsp tomato ketchup
salt to taste
1/2 cup grated processed cheese for topping
Method

  1. To make macaroni hot pot recipe, heat the butter in a broad non-stick pan, add the onions and capsicum and sauté on a medium flame for 2 minutes.
  2. Remove half of the onion and capsicum rings for the topping and keep aside.
  3. Add the garlic, tomatoes and chilli powder, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
  4. Add the sugar, baked beans, macaroni, oregano, tomato ketchup and salt, toss gently and cook on a medium flame for another 2 to 3 minutes, while stirring occasionally.
  5. Transfer the mixture to a baking dish and spread it evenly with the back of a spoon.
  6. Arrange the prepared onion and capsicum rings on top and sprinkle the cheese evenly over it.
  7. Bake in a pre-heated oven at 200°c (400°f) for 10 to 15 minutes or till the cheese melts.
  8. Serve the macaroni hot pot recipe immediately.

To make Macaroni Hot Pot:

  3. Let the water come to a rapid boil.
  4. Once it starts boiling, add the macaroni. We have used 3/4 cup raw macaroni for obtaining 1 1/2 cup of cooked macaroni. 
  5. Cook on a medium flame for 10-12 minutes, while stirring occasionally. The macaroni should be cooked until they are al dente i.e. cooked to be firm to the bite and should not be mushy or sticky.
  6. Drain well and throw the water away.
  7. Refresh the macaroni under cold water. This ensures that they stop cooking. Keep aside.
  8. Transfer the macaroni to a clean and dry plate.
  9. Cover with a lid to prevent the macaroni from drying up.
  10. To make the Macaroni Hot pot, first heat the butter in a broad non-stick pan.
  11. To this, add the onion rings.
  12. Then add the capsicum as well.
  13. Mix well and sauté them on a medium flame for 2 minutes.
  14. Once a little translucent, remove half of the onion and capsicum rings in a plate to be used as topping and keep aside.
  15. Now add the chopped garlic to the pan. You can use garlic paste as well.
  16. Mix well and sauté for 2 minutes till the rawness from the garlic goes away.
  17. Add the blanched and chopped tomatoes.
  18. Also, add chilli powder for spice.
  19. Mix well and sauté for 2-3 more minutes. Add the sugar to counter the sourness of the tomatoes.
  20. Add the baked beans as well.
  21. Then, add the cooked macaroni and the oregano. It imparts a warm peppery flavour and hence enhances the taste.
  22. Add tomato ketchup for colour and taste.
  23. Finally, add salt to the Macaroni Hot pot.
  24. Mix gently and cook on a medium flame for another 2 to 3 minutes, while stirring occasionally.
  25. Turn off the flame and transfer the mixture to a deep baking dish.
  26. Spread it evenly with the back of a spoon.
  27. Arrange the prepared onion and capsicum rings on top evenly.
  28. Sprinkle the cheese evenly over it. We have used processed cheese here, you can use mozzarella as well.

I did not have baked beans while preparing this recipe, so I replaced it with sweet corn kernels. It came out very tasty. I loved it.
