Ingredients
To Be Mixed Into A Stuffing
1 1/4 cups crumbled paneer (cottage cheese)
1/4 cup finely chopped capsicum
1/4 cup finely chopped onion
4 tsp finely chopped green chillies
2 tbsp finely chopped coriander (dhania)
salt to taste
Other Ingredients
8 bread slices
butter for spreading and greasing
8 tsp green chutney

Method
For paneer capsicum toast
- Divide the stuffing into 4 equal portions. Keep aside.
- To make paneer capsicum toast, take 2 bread slices and apply 1 tsp of butter and 1 tsp of green chutney on each bread slice and keep aside.
- Place one portion of the stuffing on one buttered-chutney slice and spread it evenly.
- Cover it with another slice of bread, with the buttered- chutney side facing downwards and press it lightly.
- Spread ¼ tsp of butter evenly over the bread slice.
- Grease a sandwich toaster on both the sides using ½ tsp of butter.
- Place the sandwich in the sandwich toaster and cook on a medium flame, till it turns brown and crisp from both the sides.
- Cut the toast into 4 equal pieces.
- Repeat steps 2 to 8 to make 3 more paneer capsicum toast.
- Serve paneer capsicum toast immediately with tomato ketchup and green chutney.
