For Onion Thyme Soup
2 cups sliced onions
1 tbsp dried thyme
2 tsp low fat butter
1 cup chopped spring onion greens
1 tbsp whole wheat flour (gehun ka atta)
5 cups basic vegetable stock
salt to taste
Method
Onion thyme soup
To make onion thyme soup, heat the butter in a deep non-stick kadhai, add the onions and sauté on a medium flame for 2 to 3 minutes.
Add the spring onion greens, thyme and whole wheat flour, mix well and sauté on a medium flame for a few seconds.
Add the vegetable stock, salt and pepper, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
Serve the onion thyme soup immediately.
