Ingredients
for methi palak makai ki roti
1 cup maize flour (makai ka atta)
3/4 cup chopped spinach (palak)
1/4 cup chopped fenugreek leaves (methi) leaves
salt to taste
2 tsp sesame seeds (til)
3 tsp oil for kneading and cooking
maize flour (makai ka atta) for rolling
Method
for methi palak makai ki roti
- Combine the maize flour, spinach, fenugreek leaves, green chilli paste, salt, sesame seeds and ½ tsp of oil in a bowl and knead to make a semi-stiff dough, using enough water.
- Divide the dough into 5 equal portions and roll each portion into a 125 mm. (5") diameter circle, using a little maize flour rolling.
- Heat a non-stick tava (griddle) and cook each roti on a medium flame, using ½ tsp of oil, till light brown spots appear on both the sides.
- Serve immediately.
